Caramelized Pig Feet

Caramelized pig feet are very heavy seasoned dish. The taste is more about the balance between sweet and saltiness. Therefore, a lot of sugar is used as the main ingredient. The ginger and peppercorn give extra uniqueness to the flavour. The cooking process itself takes about one to two hours until the meat is soft and tender. It is believed by Cambodian that it is one of the most nutritious foods, especially for breastfeeding mother.

My Obsession with Kimchi



There is a funny saying that Korean always pack their rice pot/kitchen everywhere they go. I have to agree as before the collapse of world economy in 2008, the numbers of Korean investors were at its max in Cambodia's capital city, Phnom Penh. That also resulted in growing of Korean restaurants, even from the famous North Korean a restaurant called Pyongyang. I was first introduced to Kimchi by my very first Korean employer. I liked it from my very first bite and grow the love of its spicy taste. According to Wikipedia, Kimchi is a traditional fermented Korean main/side dish made of vegetables with a variety of seasonings. It is often described as spicy and sour.

I am so obsessed to the point that I spent big amount of time surfing Kimchi recipes on youtube. I really enjoyed watching how Kimchi is made from scratch. I had to make sure that I watch my favorite youtuber/blogger Maangchi (from http://www.maangchi.com/) making her Kimchi more than twice. Eventually, I did make my most favorite Cubed radish kimchi (kkakdugi: 깍두기) and I am so proud of that.

Ingredients:
Korean radish (or daikon), salt, sugar, fish sauce, hot pepper flakes, green onions, garlic, ginger.
Directions:
Peel 4 pounds of Korean radish (or daikon).
Rinse in cold water and pat dry.
Cut it into ¾ to 1 inch cubes. Put into a large bowl.
Add 2 tbs salt, 2 tbs sugar, and mix well.
*tip: If you like your kkakdugi sweeter, add 1 or more extra tbs of sugar.
Set aside for 30 minutes.
Drain the juice from the radish into a small bowl.
Add 2 tbs minced garlic (about 5-6 cloves garlic), 1 ts minced ginger, 4 stalks of chopped green onions, ¼ cup fish sauce, 2/3 cup hot pepper flakes, and ⅓ cup of the juice from the radish.

attend The Exquisite Beauty of Asean Exhibition at Seoul, South Korea


Representing CSMA in The Exquisite Beauty of Asean Exhibition at Seoul, South Korea in 2012 which was arranged by Asean Korean Center in cooperated with Ministry of Commerce in Cambodia on 6-12Th June 2012, I found this as the brilliant opportunity for me to introduce CSMA's products to international consumers as well as business partners. It was also great honor to represent Cambodia Handicraft Sector together with Artisan Angkor.  
Since it is late spring and early summer in Korea now, it was the best and perfect timing to sell our products, especially picnic mats. Moreover, with similar tradition of using sedge mats in and outside the houses for thousands years of Korean’s history, people still find these products useful. The New design of CSMA’s sedge mats is also the additional attractive points to customers. The sale went so quickly; 90% percent of all products amount was sold on the first exhibition day. All of our products were sold out completely on the second day. There were many more individual customers came to CSMA’s booth for purchasing more products, but unfortunately we didn’t have anything left. It was really a hug success for CSMA history as well as for my very first business trip at foreign country.

Though it was only Business to Consumer Exhibition, there were 4-5 Korean Companies visited our booth. Two potential business partners are very interested in our products and the Shinsegae Department Store itself (The high-ends department store where the exhibition takes place) is also interested in our products. With very low price (4times cheaper) compared to the existing ones at the department store and comparable quality, CSMA’s products can easily take over the market.
